Supper in 90 mins

I made a resolution to try to cook once a week. Only had time this weekend for a crab cake supper.

Much of the time was waiting for the baking or waiting for crab mixture to set.

The crab cake was baked in a mold with a cheese layer on top. Besides crab, it's got spring onions, paprika, turmeric, crushed saltine crackers, beaten egg, salt, pepper and djion mustard ( seems to be my favorite flavoring agent at this time ). The sweet potatoes were baked with cinnamon, olive oil, salt pepper and a spoonful of honey.

  1. Let's see now... how did i do this. Now that I think about it, it probably took closer to 1.5 hours not one. Oh well.

    Crab: about 3.50 worth of frozen crab (abt 100-150g). Chopped finely.
    4 small plain unsalted crackers (crushed)
    1/2 to 3/4 of an egg (beaten)
    stalk of one spring onion (finely chopped)
    one teaspoon of djion mustard
    about half teaspon tumeric
    generous dash of paprika
    salt and pepper.

    non-stick mold (small cupcake sized)

    parmesian cheese (grated).

    mix the first set of ingredients well. put into mold and keep in the fridge to set a little (half an hour).

    Grate cheese and put a fine layer on top of mixture. Put into oven at 200C for 15 mins. In the last 2-3 mins or so, turn on the grill function of oven to brown the top (alternatively use a kitchen torch after you bring it out).

  2. The other cooked part of the meal was the sweet potatoes.

    Peel potatoes (3 small ones in this case), and cut into 3cm thick slices. Put into oven safe dish. Pour on extra virgin olive oil, a good shake of cinnamon powder, salt, pepper and a big teaspoon (or more to taste) of honey. Mix well by hand.

    Put into oven at 180C for 30 mins technically speaking, but....

    In this case, I combined with the crab dish by cooking at 180C for 13 mins, then turning it up to 200C. Last 15 mins, cook the crab in same oven.

  3. While baking going on, slice cherry tomatoes, cucumber, cheese (mature cheddar). Add olives and crackers.
