Chicken fabrication


2.5 chickens worth of parts, skin and bones. The bones to be used for stock. The skin for fat rendering. And the meat for fried chicken. 

I left a fair bit of meat on the bones and one of the thighs was too small.

Impromptu stew

Made with leftover stuff. 2 small sausages, small pkt of minced meat, onion, my homemade canned tomato stock and thyme. Also some lentils and barley.

Brown the sausages (chopped) and minced meat separately. Then add chopped onions and try to soften. Add garlic and fry a bit more then add back meat. Blend the canned tomato and then add in together with thyme and the lentils/barley. Bring to a boil, then lower heat and simmer until lentils and barley are cooked.

Add chili flakes, pepper and salt to taste.

Pumpkin and sweet potato mash

Good for supper or even breakfast (with or without yogurt.

I like the texture on this one (mw says she prefers more sweet potato to pumpkin ratio).

Steam about equal parts by weight of roughly chopped sweet potato and pumpkin for 25 mins at 90C. In a large bowl, dump the steamed roots, add butter, cinnamon powder, nutmeg powder, orange essence or liquor, apple cider vinegar and honey to taste. Also sprinkle some salt. Mash the lot.
